Potato Poblano Chowder
- 6 medium potatoes
- 1 medium onion
- 1 tbsp chopped garlic
- 1 medium Poblano Pepper
- 1 cup corn
- 1 tsp salt
- 1/4 tsp ground pepper
- 2 cups water
- Pressure cook the potatoes for 5 minutes on HI then 10 minutes natural release.
- dice the onion and pepper and sautee
- Add the water and salt and pepper.
- cube the potatoes and add to the soup
- At this point you can mash or blend to get a creamy chowder going.
