Potato Poblano Chowder

Ingredients

  • 6 medium potatoes
  • 1 medium onion
  • 1 tbsp chopped garlic
  • 1 medium Poblano Pepper
  • 1 cup corn
  • 1 tsp salt
  • 1/4 tsp ground pepper
  • 2 cups water

Instructions

  • Pressure cook the potatoes for 5 minutes on HI then 10 minutes natural release.
  • dice the onion and pepper and sautee
  • Add the water and salt and pepper.
  • cube the potatoes and add to the soup
  • At this point you can mash or blend to get a creamy chowder going.
