Tofu cooked over low heat for a long time; season appropriately toward the dish

- 1 block Extra firm tofu
- 1 tbsp Seasonings
- 1 Green Onion, shallots, garlic, dried hot peppers... optional
- Break up, or cube, tofu into small chunks and add to dry, nonstick fry pan.
- Cook on medium-low. Add the seasonings you want to use. Depending on the meal you can use any seasoning you want.A typical all-purpose seasoning for us would be salt, pepper, and garlic powder, all to taste.
- Cook tofu until browned evenly on all sides. Add the optional onion at the end.
One block of tofu should make about 4 servings. We use cast iron pans, but any nonstick will work. We have made Slo-n-Lo in a copper pan, and it worked fine. Work with what you have, but replace your old, crusty pans with better one at a time as you can. Remember to always use an appropriate tool with your pan: no metal on teflon pans! That's just askin' for trouble! Slo-n-Lo is best thought of as a starter ingredient. You can use it in place of anything that calls for chicken; it works especially well for teriyaki, sweet & sour, taco filling, or even just by itself. Just like chicken, you'll need to season it according to the dish.
